Okay, the photo looks kind of gross because I don’t have a neat awesome camera that does super macro shots. But it was pretty delicious! Pan-seared salmon with mango and orzo with dill and roasted tomatoes.
Seasoned with salt & pepper on both sides, seared about 2 minutes each side, then oven (350-400 F) for about 5 minutes. Mangoes sauteed with garlic, red chili pepper flakes, and lemon juice (a little strong for my taste; I would probably decrease the amount of lemon juice and maybe add brown sugar?). Orzo mixed with cream cheese, dill, and oven roasted tomatoes (drizzled with olive oil, salt, pepper, oregano). I set off the fire alarm, oops, so I’m afraid to cook the second filet I bought. Hmph.
