Dinner.

Grilled romaine wedges with Caesar dressing:
1 romaine heart, cut in two halves, brushed with olive oil and grilled on stovetop griddle
1/4 cup olive oil
1 tsp anchovy paste
3 garlic cloves, smashed
1 egg
panko breadcrumbs & shredded Parmesan cheese (for garnish)
salt & pepper

Smash & whisk garlic, olive oil, anchovy paste, and egg to make dressing.  Salt and pepper to taste.  After grilling the romaine halves, place on plates and pour dressing on top and sprinkle with panko breadcrumbs (toast with butter & parsley for extra yummyness).

PIZZA – garlic & herb pizza dough plus pizza sauce from Trader Joe’s, topped with spinach, red peppers, roasted corn, leftover prosciutto, smoked gouda, little slices of brie and apples.
